Nova Coffee was born from an architect’s obsession with sensory stillness. We roast micro-lots from volcanic soils elevated above 1,900 meters, extracting each varietal to celebrate its singular terroir.

Volcanic Micro-Lots

Ethically sourced direct-trade beans harvested at peak elevation in Gesha, Yirgacheffe, and Huila. Roast profiles calibrated with infrared precision to unlock jasmine, bergamot, and rich cocoa notes.

Kyoto Slow-Drip Extraction

18-hour atmospheric cold-water extraction passing drop-by-drop through hand-blown borosilicate towers. Zero thermal bitterness; pure velvety clarity with natural sweetness and aromatic density.
